Peach Cobbler

Filling:
6 - 8 large peaches, peel, pit, sliced
2 1/2 tbs. cornstarch
3/4 to 1 cup sugar
Crust:
1 cup flour
2 egg yolks
1/4 cup butter or margarine, melted
1 tsp baking powder
1 cup sugar
2 egg whites, stiffly beaten

Directions

Combine peaches, cornstarch and sugar; pour into a greased 13"x9" pan. Combine flour, egg yolks, butter, baking powder and sugar in bowl. Gently fold in beaten egg whites. Spread over peaches. Bake at 375 degrees for about 45 minutes until fruit is bubbling around edges and the top is golden brown. Makes 12 servings. Top with ice cream, if desired.
