Strawberry Cake
- Ingredients
- 1/2 cup shortening
- 1 1/4 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 1/2 - 2 cups diced strawberries (can mix in some rhubarb)
- 1 tsp. soda
- 1/2 tsp. salt
- 1 cup buttermilk
- 2 cups flour
- Topping
- 1/3 cup sugar
- 1 1/2 tsp. cinnamon
Directions
Cream shortening, brown sugar and sugar. Beat in egg. Mix flour with salt and soda and stir into creamed mixture, alternately with buttermilk. Stir in strawberries. Pour into 9x13" greased pan. Combine topping ingredients and sprinkle over batter. Bake at 350 degrees for 45 minutes. Cool. Top with whipped cream if desired.
